Perfect Weeknight Salad with Norwegian Salmon

Procedure

  • Preheat an oven to 350ºF.

  • Cut Norwegian Salmon into 4 equal portions. Place on an ovenproof tray lined with aluminum foil and season salmon pieces with salt and pepper.

  • Roast salmon in oven for 12 minutes or until desired temperature is reached.

  • While salmon is roasting, cut cherry tomatoes in half, and thinly slice fennel and radishes. Combine mesclun, tomatoes, fennel, radishes and crispy onions in a bowl. Toss salad with a desired amount of vinaigrette and place equal amounts on 4 serving plates.

  • Place cooked salmon on top of salads and serve.
