Norwegian cod sautéed with beans, sweet potato and thyme

A way of making Norwegian cod ideal for the coldest days of winter. This warming dinner with cod, beans, sweet potato and thyme is a dish with delicious flavours.

Ingredients

Preparation

  • Finely chop the onion and sauté in a saucepan with a tablespoon of olive oil for about 5-8 minutes
  • Add the thyme and garlic, stir and cook for 1 minute before adding the tomato along with the salt and pepper. Cook for 2 minutes
  • Add the hot broth and the sweet potato. Cook over low medium heat for 15-20 minutes until the potatoes are almost done
  • Then add the beans and cook for another 5 minutes, being careful not to break them when stirring
  • Season to taste and keep warm while we prepare the cod
  • Heat a frying pan with a tablespoon of olive oil
  • Season the cod loins and place them in the pan skin side down once the oil is hot, for 5-8 minutes
  • Turn the cod loins and leave for 1 minute
  • Serve the cod on a bed of beans, sweet potatoes and onion.
  • Garnish with a sprig of fresh thyme and lemon zest.
