Club Sandwich with Norwegian Cod

Pan-fried Norwegian cod between two slices of bread is a quick and easy lunch or dinner for a busy day. This recipe shows a healthy meal for a busy day.

Procedure

  • Cut the cod into servings.

  • Mix pepper and thyme, and roll the fish in the mix.

  • Sprinkle the cod with salt and pan-fry in a mix of butter and olive oil, approx. 3 minutes on each side.

  • Pan-fry bacon crispy and let dry on a paper towel.

Dressing

  • Mix all the ingredients for the dressing.

  • Taste with a little mustard and sugar.

Serve with

  • Slice tomato and rinse the salad.

  • Toast the bread slices.

  • Cover half of the bread slices with cod, bacon, dressing, tomato and salad.

Cover with the rest of the bread slices, and serve.
