Air-Fried Cod Fish Sticks with Crisp Potatoes and Yogurt Dill Dip

Cod Fish Sticks
- Remove skin from cod, cut into 1-inch wide and 3-inch length sticks
- Pat the cod with a paper towel then season the fish sticks with salt, pepper, garlic powder, Italian seasoning, and smoked paprika on both sides.
- Mix together the flour and half the grated Parmesan cheese, dip the fish stick into the mixture until it is well coated and shake off excess.
- Beat together the egg and Half n Half, dip the fish stick into the mixture and shake off the excess liquid.
- Mix together the breadcrumbs and remaining grated Parmesan cheese, dip the fish stick into the mixture until it is well coated and shake off excess.
- Add the fish sticks to a lightly sprayed air fryer in one layer. Lightly spray the top of the fish sticks then cook on 400 F for 7 minutes on each side.
- Squeeze with a little fresh lemon juice
Crisp Potatoes
- Cut into quarters
- Mix potatoes together with salt and pepper to preference, smoked paprika, garlic powder, dried Italian seasoning and olive oil.
- Add to the air fryer to cook at 400 F for 12 minutes until crisp and cooked through.
Yogurt Dill Dip
- Mix together plain yogurt, sour cream, mayo, lemon juice, chopped dill, minced garlic, olive oil, salt & pepper to taste. Enjoy the fish sticks and potatoes with the homemade dip.
