Preparation
- Preheat the oven to 325 °F.
- Cut the salmon in portions, drip with olive oil and lemon juice and sprinkle with salt and pepper.
- Slice the mushroom, pan-fry in butter and sprinkle with salt and pepper.
- Place the mushroom in an oiled oven-proof dish with dill and lay the salmon over.
- Put a cooking thermometer in the thickest part of the salmon, cover with aluminum foil and bake in the oven until the fish has a core temperature of 105 °F.
- Serve with salmon roe on top, and rice on the side.
