  • Combine minced ginger, thinly-sliced shallots and chili paste; set aside.

  • Combine soy sauce, sweet soy sauce and lime juice; set aside.

  • Peel the Norwegian King Crab and cut into 2-inch pieces. In a large sauté pan over medium-high heat, add olive oil and the crab. Cook until crab is bright red, then remove from the pan onto a platter.

  • In a pan over medium heat, place sugar until it starts to caramelize. Add coarsely ground black pepper and stir for 10 seconds, then add the ginger-shallot-chili mixture.

  • Add the juice of the lime and the soy; bring to a boil, then turn off heat and pour over crab legs.

  • Serve alongside garnish of quartered limes and fresh cilantro.
