  • Cut the haddock into 1-inch cubes.

  • Boil coconut milk and fish stock.

  • Thinly slice the spring onions, slice the jalapeño into ¼-inch rounds, mince the garlic and grate the ginger. Add onions, jalapeño, mushrooms, garlic and ginger to the stock.

  • Simmer 3 minutes.

  • Dice Norwegian Haddock into 1-inch cubes. Add haddock to the soup and cook 1 more minute.
