Norwegian Cod with Green Peas, Butter and Fresh Sprouts from Brimse Island

  • Boil peas for one minute in salted water. Drain and set aside.

  • In a pan, sauté shallots and peas in ¼ cup butter. Add cream and mustard and cook for 2 minutes, blending until smooth.

  • Sauté remaining butter until medium-brown in color. Add soy sauce, garlic, sage, tarragon and capers. Season to taste.

  • Sauté Norwegian Cod in a pan until the skin is crisp and the fish meat is flaky.

  • Arrange on a plate with cod over the creamed peas. Top with brown butter sauce and sprouts on the side.
