  • Preheat an oven to 325ºF.

  • Cut Norwegian Cod into 2 oz. portions; place onto a foil-lined baking sheet. Cook at 325ºF for 8 minutes, until cooked through. Allow to cool 4–5 minutes until cool enough to handle; shred into a bowl.

  • Peel, quarter and boil potatoes until fork-tender; mash and set aside. Keep potatoes warm or cover with plastic wrap.

  • Mince onion and garlic and sauté in olive oil. When soft and translucent, mix with mashed potatoes and shredded cod.

  • Chop the parsley and separate the eggs.

  • Add chopped parsley and egg yolks.

  • Whisk egg whites until stiff and fold into the mixture.

  • Using two soup spoons or a small ice cream scoop, mold Norwegian Cod Cakes and shallow-fry in vegetable oil over medium heat.

  • Serve with salad.
